Healthy Soul Choice.  Dr. Nobantu Ankoanda watches the seeds of the Collard Greens Cultural Festival sprout around the country.  From beginnings in East Palo Alto, the observance has spread to Philadelphia, Chicago, Ft. Worth and Atlanta.  The Atlanta event, first held in 2010, spawned year-round efforts like a Black Farmers Market.

Delicacies of the Day. Eagles Restaurant, 2610 16th St. N in Birmingham, gets its collard greens direct from the Jefferson County Farmers Market a few blocks away and touts their freshness.

Ruby's, 3175 Madison St. in Chicago, has dished out huge portions of collard greens for more than 40 years, most of them as Edna Stewart's, before long-time chef Lillie Joiner took over for the late founder two years ago.

Cora Faye's, 2861 Colorado Ave. in Denver, touts 100-year-old family recipes for greens and other delights on their menu.
